WCI offers both a Le Cordon Bleu Culinary Arts program and a Le Cordon Bleu Hospitality & Restaurant Management program.

The Culinary Arts program centers around hands-on teaching of cooking and baking skills, as well as the theoretical knowledge behind those skills. Students will learn to practice advanced technical skills in food preparation, all the while becoming familiar with purchasing and inventory controls, buffet work and plate presentation, front-of-the-house operations, and basic principles of kitchen management. Other topics covered include the principles of food identification, nutrition, dietetics, and food/beverage composition.

Some of the basic kitchen techniques you'll be taught include knife skills, making stocks and sauces and learning about and preparing various cuts of meat. Part of the training is also learning maintenance and care of food service equipment. You'll learn how to prepare a restaurant menu and how to go about buying the necessary foods. You'll learn about nutritional values of food. You'll learn wine fundamentals such as reading labels, learning about nuances of different grapes and bouquets. You'll learn how to cook for larger groups and how to set up buffets. All along the way in culinary arts school you'll be learning how to work as part of a team.
